To be honest with you I don't know who started that trend and why they follow it. None of the gurus had their beards tied up. If you are a doctor, dentist or any occupation that if you have your beard not tied up it is a safety hazard then yes tie up your beard but only for work. Maybe the reason why people tie up their beard is because they want to fit in with the others, when the gurus made us stand out, they made it so that if you look in a crowd of hundreds or thousands of people you would be able to spot a sikh from miles away because, the gurus gave us an identity. I am only 13 so this may not be the best answer. Hope this helped.
