Should I open my ajna chakra (third eye)? Do sikhs even believe in third eyes?

Yes, it is real.

"To see without eyes; to hear without ears; to walk without feet; to work without hands; to speak without a tongue—like this, one remains dead while yet alive. O Nanak, recognize the Hukam of the Lord’s Command, and merge with your Lord and Master." Ang 136

You can see with your eyes closed. You can hear things anywhere in the world. It is called the subtle body. There is no need to "try" to do these things? Why? All experiences come by Guru Ji's kirpa. If your longing for God is pure and strong, you will have exactly the experiences you need to progress in your spiritual growth.
