If a sikh uses irony and later says he/she was just joking Is he/she being untruthful? I have actually sometimes difficulty understanding irony. when some people say something and mean another thing.

Irony and sarcasm are forms of humor. Meanness is not. This is a matter of intent. If the intent is to hurt or attack someone, then, no, that is not the Sikh way. Humor can easily be misunderstood, so you must tune in to the 'frequency' of the person speaking and understand their intent.
Wow I am sorry I am not a registered/authorized person to answer your question. But you are making your life way too much complicated by worrying too much about what other's say or do. Just focus on "your" karma and "your" interaction with the cosmos. We are here for our journey and our relationship with the Infinite. Don't trap yourself in things that don't matter in the bigger picture.
